My preliminary research experience involved the Fish and Peanut Study conducted in the metabolic kitchen. This study was a controlled, single blind, randomized trial using healthy human participants. The Fish and Peanut Study used a Latin-square design including three diets and three study periods. After a one week run-in phase, each participant adhered to the control, walnut, or fish diet for four weeks each. There was a one week washout period between each diet. Blood draws were conducted at baseline and twice at the termination of each study period. My involvement in this study included helping to recruit participants and on-site evening supervision for all three study periods. During the evening shifts, my responsibilities included preparation for the evening meal, weighing food items, packaging food for the next meal, and assessing participant dietary compliance. Since participants were allotted a two-hour time frame to come in for their evening meal, I helped ensure that the evening meals were pre-weighed and ready for each participant. During the evening shifts, I would assist the chef with planning future menus which including inventory checks, filling out purchase orders, and creating production sheets. I helped organize work sheets for the other staff members so that the evening shift would run more efficiently. This included setting up an assembly line process whereby each staff member was responsible for labeling, preparing, and weighing specific food items assigned to them. This helped to eliminate errors in mislabeling dishes and weighing food items. Another part of my responsibilities included eating and spending time with the participants in order to assess dietary compliance. Developing good rapport with the participants helped the staff to ascertain what was helping or hindering each participant’s motivation to stay on their diet and to continue the study. I had a great experience working on the Fish and Peanut Study. I learned the protocol and procedures necessary in running a controlled feeding study. This experience will be essential in helping me with other research projects I will take part in. Another great aspect of this study was the wonderful staff which made the long hours fly by quickly. During the last week of the study, most of the evening staff members took time out of their busy schedules to decorate the dining area so that the participants could enjoy a farewell brunch. My work experience on this study was inspiring on both a professional and personal level.
